Easy chocolate cake

If you want to make a birthday cake, or just like eating chocolate cakes, this is a great cake for you. It can last up to 5 days, in refrigerator of course. You will need:

• 85g cocoa powder
• 2 eggs
• 225g plain flour
• 1½ tablespoons baking powder
• 350g caster sugar
• 250ml milk
• 1 ½ tablespoons bicarbonate of soda
• 2 tablespoons vanilla extract
• 250ml boiling water
For the chocolate icing, you will need:
• 200g plain chocolate
• 200ml double cream

The first thing you must do is to heat the oven on 180°C (350°F). Place all ingredients needed for cake (except water) into a large bowl. Mix, using electric mixer or the wooden spoon until it becomes very smooth and well combined. Add boiling water and continue mixing. When the mixture becomes liquid, you are done. Put the cake batter in sandwich tins and put it into the oven. The baking time is 25-30 minutes. The top should be firm when you touch it. After removing them from the oven, put the aside and wait to cool.

Now, you must make chocolate icing. Heat a cream and chocolate in a large saucepan (on low heat), until chocolate is completely melted. Remove it from the heat and whisk a couple of minutes. Leave it aside for 1-2 hours, until it is completely cooled. Carefully remove, now cold, cakes from the tins. You may cut around the inside of them, in order to loosen the cakes. Pour a chocolate icing over the one of the chocolate cakes and top it with another. Put the cake on a serving plate and ice it all over with the icing. You must use a palette knife. For making one cake, you will need 30 minutes for preparation and 30-1h for cooking.
