Recipes for three meatless meals

Cooking is fun, interesting and it helps you have a healthy life, so you should do it every time you have the chance. There are many interesting recipes that you can try apart from the classic hamburger and fries, and all you need is a little bit of imagination and desire to create something new. Since the summer is already here, a meatless, easy meal is the best choice, so check out these three simple recipes:                                                                             

  • Ragu Pasta. You probably have eaten Ragu Pasta before and it contained meat, but it’s easy to make a lighter version. Chop one small onion, two garlic cloves, two medium tomatoes and a few bits of oregano and let them boil together for an hour, mixing every 10 minutes. When the vegetables turn into a creamy sauce, add boiled pasta and mix them for a few minutes. Simple, delicious and healthy!
  • Omelet with vegetables. For a healthy and filling breakfast, eggs and vegetables are the best. You can use any vegetables you want – tomatoes, olives, mushrooms or peppers; chop them into small pieces and fry them in a spoonful of olive oil for one or two minutes. Add the omelet and cook it over a small fire until ready. Chop some green onion on top for more flavor.
  • Baked potatoes. You will need tomatoes, onion, garlic, celery, mushrooms and cheese. Cut the potatoes in half, bake them. When they are ready, scoop the potato out of the skins. Mash the potato and add the chopped vegetables. Re-stuff the potato halves and sprinkle some cheese on top. Add salt and pepper to taste. Put them back in the oven for at least 20 minutes and enjoy with a cold sauce. You can always replace the cheese with vegetarian cheese for a lighter version!
