Four Keto Diet Foods from

A Keto Diet requires recipes that are low in carbohydrates, moderate in protein, and high in fat. It allows the body to switch from using carbohydrates for energy to using fat. Elana’s Pantry features recipes for foods that will help you get started on a keto diet.


  1. Keto Brownies

1 cup macadamia nuts

¼ tsp. sea salt

¼ tsp. baking soda

3 oz. of 100% dark chocolate – chopped into small pieces

½ cup coconut oil

2 tbsps. erythritol

3 large eggs

1 tsp. vanilla stevia


Method: Put nuts, salt and baking soda in a food processor. Pulse until fine. Add chocolate and coconut oil. Pulse until smooth. Add rest of ingredients and pulse until thoroughly mixed. Place batter in an 8x8 greased pan and bake at 350 degrees for 25 to 30 minutes.


  1. Keto Lime Creamsicles

1 can of coconut milk

½ cup mashed avocado

½ cup lime juice

¼ tsp. vanilla stevia

½ tsp. vanilla powder


Method:  Combine all ingredients in a blender. When smooth, pour mixture into popsicle molds. Insert sticks and freeze for 4 hours.


  1. Barbeque Kale Chips

Bunch of curly kale

2 tbsp. olive oil

2 tbsps. macadamia nuts

¼ cup nutritional yeast

2 tsps. Of Primal Palate Barbecue Rub


Method: Tear kale into 3 inch pieces (discard the stems). Put kale in a large bowl and drizzle in the oil. Transfer to a food processor. Add nuts, yeast and seasoning and grind into a paste. Spread on a baking sheet and bake at 300 degrees for 30 minutes until kale is dark green and crisp. Cool and break into pieces.


  1. Zucchini Noodles

1 tbsp. olive oil

1 lb. of zucchini – peeled and cut into long thin strips

1 tsp. all purpose chef’s shake


Method: In a large skillet, heat the olive oil. Add the zucchini strips. Stir for 5 minutes until noodles are tender. Serve hot with your favorite sauce.
